Chocolate Victoria Sponge

I got a new set of cake tins from my mum for Christmas so over the weekend I made a Chocolate Victoria Sponge, with a creamy butter icing middle.

Home made chocolate brownies with freshly grated orange

Our New Years Eve Dinner Party wouldn’t have been complete without our home made hot chocolate and orange brownie. We cut into squares and served with piping hot chocolate sauce and ice cream. It was delicious and we felt that the orange juice and rind was a great addition.

Home made truffles

We had another great truffle baking session just before Christmas and bagged up our festive treats to give away as presents for our family! We used bright ribbon and home made tags to jazz them up a bit! They went down very well!

—————-

Get festive with these assorted mince pies!

We made a variety of mince pies one chilly winters day, accompanied by a Christmas compilation album, it was great fun! We followed a simple short crust pastry recipe, and glazed the finished pies with egg and milk before putting in the oven to give beautiful golden brown colour! When they came out the oven we dusted with icing sugar.

—————-

A lovely rich chocolate cake

We followed a victoria sponge recipe and added cocoa powder to give rich chocolately taste

—————-

Lemon sponge cake and rich tea biscuits

This cake was a great tea time treat, served best with fresh jam and a warm cuppa! For the cake we used a victoria sponge recipe and added to it the freshly squeezed lemon rind and zest. We added the rest of the lemon to our biscuit mix.

—————-

Pink and blue macaroons with lemon cream middles

We took these little after dinner treats to our friends house over the bonfire weekend. They were a great addition to the fun filled games night and sparklers shared together!

—————-

Truffles

These gorgeous home made Chocolate truffles were made with our friends Dan & Tara. Alot of fun, yet very simple! They are very popular in our family and do not last long at all!

—————-

Orange and raisin cake slices!

Perfect for getting you up those steep hillsides! Every back pack should have some in it!

—————-

We love meat balls!

—————-

Jam Tarts

Our wonderful friend Felicity came to visit us and we made homemade chicken pie with vegetables and a white sauce for dinner! Ah it was so delicious! We had lots of left over pastry so decided to make Jam tarts. Flic had been a busy bee and made homemade plum jam, which she gave us for a present, we used it to fill and they tasted great!

One of Darren’s favourite’s has to be beautiful Crumbly Shortbread

———————–

Pumpkin soup

Some friends came over to visit during October half term so we made fresh pumpkin and vegetable soup, with garlic and grated ginger! So scrummy, great for a cold autumn day!

We find this so quick and easy to make in the week and is always exciting to get on your plate and eat. Watching the batter rise through the oven door is great too!

Party Fruit Scones.

We baked this batch of scones for Rachel’s mums afternoon tea party. A great treat and great with fresh cream and a cup of tea.

Fun in the kitchen with Claire and Lara.

Lara decorates our finished sponge with chopped up jelly beans and icing. Get those hands mucky! We had such a good time – cooking is always better with little helpers around. Lara loved the box of icing sugar too much; so much so, it was snowing in the kitchen!

———————

Chilled Lemon and Blueberry Cheesecake with biscuit base.

This is easily one of our favourite desserts! Alot healthier than the baked cheese cake!

Using local produce and freshly picked blackberries we got into making fruit and savoury pies! Chicken and Leek is easily one of my favourite fillings! Hmmmmm……

Not healthy at all but extremely tasty and rewarding!
